Ya think we are going to need another 3-4 boxes of the stuff we bought for next year. We have started doing full sized. The glee from the kids when they realize it is worth the added cost.

Let’s have some of your favorite recipes for Christmas cookies, candies, cakes and so on. I love the ones handed down generation to generation.

Smoker arrived last week but didn’t get a chance to put it together last weekend. Hoping to do it this weekend so I can get a few smokes in on it before I do the turkey for thanksgiving.

Since Thanksgiving is so late in the month this year when is everyone planning to decorate for Christmas? My wife said yesterday we have to decorate before Thanksgiving so that we have more time with our Christmas decorations. We have a new house this year so have to find everything and also figure out what we are going to put where. Nice thing is all the ceilings are high so we can do bigger trees (yes plural) though with how our family room is laid out not sure we will be able to put one in there.

We weee in Michael’s last night picking up some hem tape for our daughter’s costume. Checked out the clearance section and ended up picking up 4-5 things for gifts. Got some good deals.

We bought an inflatable one on Amazon. Has worked pretty well. We ended up and bought an outdoor projector stand also. Made the setup much nicer.

I did something like it a while back. I had a pallet, I built a lighting system and made a light show that resembled flames and fire, put it inside the pallet, put a smoke tube under that, put fake hands coming up through the openings in the pallet and then used leaves and stuff around the pallet to hide the edges and stuff. Made a small sign that said Pit To Hell.

My nest friend is a fire fighter and years ago got my wife freaked out about candles and what can happen. So now we only do the melts.

SO I normally dry age it for about a week, trimming and changing the cheese cloth during the week. Then on the day of the smoke I take it out to bring to room temperature, I start the smoker up and get it to about 225, while it's coming to temp I will usually rub the rib in some good olive oil and then I use one of a rubs (depending on how we feel). I either make one up with garlic powder, sea salt, fresh cracked black pepper, onion powder and possibly a little rosemary. If we want a little more flavor a friend owns a company that makes rubs for sale and I order some of his Pitfaced OG rub it's little bit of sweet a little bit of heat and just overall really good. I try to let it sit in the rub for a little while then on to the smoker. I don't go by time I go by temps internal and I tend to pull it about 5 degrees before it's at the temp I want. It then gets wrapped and set for about 30-60 minutes (this lets the juices draw back in and allows it to finish cooking). Once we are ready, I unwrap and slice to the thickness we want.

To be honest a lot of it comes down to what do you want to spend. The cheaper ones will usually do for now, the more expensive ones are for many years. We ended up going to a hybrid memory foam/coils. It gave us the best of both worlds. We also did an adjustable frame.

Ya we moved out of state for my job so we have no friends here either. Back home we had a huge party usually like mid December every year. Family, friends. Lots of food and drinks and fun. We did the same thing for NYE as that’s also our anniversary. We added much more drinks and would usually end up with some of the people staying there because of said drinks and playing like Cards Against Humanity until 3am to 4am.

Ordered my new smoker yesterday that I’ve been wanting for a while now. Got me to thinking what will we do for our holiday meals this year.

We picked up our current tree from Home Depot 4-5 years ago. Now that we have tall ceilings again we will probably be picking up a bigger one this year.
