Make this every year...family favorite.

                   Pumpkin Roll

Cake ingredients

3 eggs               1 c. sugar

1 c. pumpkin     1 tsp. soda

1 tsp. vanilla      1/2 tsp. cinnamon

3/4 c. flour         1/2 tsp. pumpkin pie


Filling for pumpkin roll

1 - 8 oz. cream cheese softened             

1 c. powdered sugar

1 tsp. vanilla

2 Tbls. butter softened


Heat oven to 375 degrees. Place parchment paper in bottom of 9x15 inch pan (jelly roll pan). Lightly spray with PAM.

Mix cake ingredients together thoroughly. Pour cake mix into pan and spread evenly across pan. Place cake in oven

and bake 10-15 minutes. Check at 10 minutes for doneness. While cake is cooking, wet a towel big enough for the cake to be

turned out and and roll up to cool. I wring all the excess water out of towel, just want it damp. Spread towel out on counter or table.

Remove cake from oven. Line edge of pan about 1 inch from edge of towel and turn out cake onto towel. Remove parchment paper 

from cake. Fold edge of towel of cake on long side and roll all the way up like a rug. Carefully pick up cake and place in

refrigerator to chill for 20 minutes.


Mix filling ingredients together thoroughly until creamy. Remove cake from refrigerator and unroll. Spread filling over cake. Roll 

back up and slice. Place slices on plate and serve. You can dust with powdered sugar if preferred.

This is the homemade Mac and cheese that I make


1 box elbow macaroni

mac and cheese blended cheese already shredded (one 8 oz bag per box pasta)

1 lb of land o lakes yellow cheese (shred it yourself)

Triple cheddar cheese shredded (I usually use one 8 oz bag per box pasta)

half a can of evaporated milk for each box of pasta

1 egg for each box of pasta



handful of sugar


Preheat oven to 375 degrees

spray pan, I usually use foil pan

put evaporated milk and egg in a bowl and mix

put cooked pasta in sprayed pan and add salt, pepper and handful of sugar

pour in milk and egg and mix in cheeses saving some to sprinkle on top

you can never have too much cheese

bake at 375 for 1 hour
