I now wish I had a leave in multi probe thermometer, but all I have is a store brand is single use which isn't super accurate, thus needing to take multiple readings with my Thermapen when the leave in alarm goes off. I am gifting my partner with the Smoke X2 for the holidays; now I think I'll keep the less accurate probe as well, so I can monitor both breast and thigh meat. Another thing I learned from the video is to not truss the legs together when roasting a whole turkey. Apparently leaving them untrusted helps the dark meat get to proper temperature without overcooking the breast meat.
  2. ah... But which Alton Brown method? I love the original Good Eats Roast Turkey mwthod, but AB came out with a spatchcock version he prefers. I stick with the original, though. However, I learned in this tutorial that I've been inserting my stay in probe thermometer incorrectly, that I need to take the readings with my Thermapen slower, to change the type of roasting pan I use, and to ice the breast of the bird as I take the chill off the rest of the bird before roasting. All things I can implement while following AB's method. I also have decided to put compound butter under the skin at the start, and then I'll melt more of the compound butter and brush it on the skin after the high heat roast and before putting on the foil shield. If I can get all of that out of an hour tutorial, and still use the same method I love for roasting the bird, you better believe I'm going to recommend folks view it.

  5. I had a suspicion Thermoworks was going to do this. I received an email today which says the 18% off site wide sale as been extended. I don't see any information on how long they're extending it for, but probably at least through today. Thermoworks also uploaded a turkey roasting tutorial to YouTube today.   7. Yeah. A main reason why standing rib roast is a special occasion treat, other than preparation, is it is usually a very expensive cut. Especially, if it is actually prime grade, and not the standard choice grade most standing rib roasts on sale at grocers tend to be. However, if it is prime grade, you got an excellent price and it will be super tender.

  12. While not my favorite Chr-stmas song, I do love Greg Lake's I Believe in Father Chr-stmas. While it is still a bit early for me to start listening to holiday music, when I read that the Greg Lake YouTube channel released a restored 4K video of the song yesterday, I had to go watch it. As far as I can tell, the audio was not remastered or altered in anyway, so it is the same version that I have loved, but in a pristine video. Every other version I have seen prior to this has been blurry. What a treat to come upon.

  23. Len, I would seriously love it if you would start and continuously update a How to Dehydrate using an Air Fryer topic in The Lounge. I understand it would be specific to your equipment, but I expect I could adapt your procedures to my Power XL Oven. I'm particularly interested in drying fresh herbs on the verge of turning using the dehydrator, as eating jerky is pretty much impossible for me with my full dentures. But, I'm willing to give jerky a try for other household members, as well as any other dehydrated food you care to post about. Please give this suggestion some consideration. TIA!
  24. Here in the Eastside of Seattle, I've learned that residents kind of look down upon umbrellas. Hooded wind breakers/shells are the acceptable wet weather gear. So, while fleece hoodies are toasty warm, any GD logos would be covered up by the over shell in our typical wet weather. A lightweight, hooded windbreaker would be a very welcome addition. Also, long sleeve or 3/4 sleeve tee-shirts would be nice.
  25. I'm pretty happy with my Power XL Oven, but if I had disposable income I would so upgrade to this.
