Holiday Menu

Anyone started to lay out their menu for Thanksgiving yet? We started on ours last night it may change over time. So far this is what it looks like.

 

Appetizers:

Buffalo Chicken Dip

Cream Cheese/Veggie Rolls

Pita Chips

Veggie Tray

 

Main Dishes:

Smoked Turkey

Honey Glazed Ham

Mashed Potatoes

Gravy

2 types of Stuffing/Dressing

Green Bean Casserole

Sweet Potato Casserole

Cranberry (Thinking about trying to make our own this year as well as the can shaped stuff) :)

Corn

Rolls

 

Dessert:

Chocolate Chip Pecan Pie

Chess Pie

Butterscotch Pie

Chocolate Pie

My Thanksgiving menu was written out a month ago because I'm a planner & just so i wouldn't forget an ingredient...lol...but i always make the same thing:

 

Turkey-roasted

Cornbread Dressing (thinking about making an oyster dressing as well this year)

Baked Mac & cheese

Collard greens

Sweet Tato casserole (2 kinds)

Potatoe salad

Cranberry sauce

Deviled eggs

Hawaiian sweet rolls

Cornbread

 

 

Dessert:

Sweet potato pies

Cheesecake pies

Peach cobbler w/ french vanilla ice cream (maybe)

 

And anything else i might want to add...

Same menu every year although a few things may change this year since we lost my grandmother in July.

 

 

 

Turkey

Ham

Dressing 2 pans, with onion and without onion

Dumplings

Giblet gravy

Mac & Cheese

Mashed potatoes

Hash brown potato casserole

Candied sweet potatoes

Purple hull peas (Frozen from fresh during the summer)

Butter beans (Frozen from fresh as well)

Sweet corn (Also frozen from fresh)

Slaw

Cranberry sauce (the canned stuff)

Deviled eggs

Rolls of some sort

 

Pecan pie

Pumpkin pie

Chocolate pie

Egg custard pie

Chocolate sheet cake

Well, I guess it will be just me, husband, and sons this year, no daughter or rest of the family. <sad face> So guess I'm cooking for the first time ever. A few things we normally have, like dressing, my guys don't like, so I probably wont bother for just me. So far this is what I've got.

 

Turkey (no clue how to cook a turkey!)

Mashed potatoes

Noodles cooked in turkey broth

Green beans

White corn

Sweet potatoes

Asparagus (maybe)

Dinner rolls

Pickles, olives, cheese cubes

 

Desserts

Pumpkin pie

Oreo dirt cake

Wow I COMPLETELY forgot Pumpkin Pie :)

 

Turkey is fairly easy to make. Preheat your oven to 325. Make sure the turkey is completely thawed, open it up and make sire you get all the giblets and neck and such out of it. I usually rinse it out well then pat it all dry. I usually put a little olive oil on the skin sprinkle with some salt and pepper inside and out. Put it in a shallow roasting pan (if you use the aluminum disposable ones I suggest a cookie sheet under for stability) breast side up. Roast it until the thickest part of the breast is about 165 degrees and the thigh is about 180. Usually about 2/3 rds of the way into cooking I cover it loosely with foil so that the skin doesn't get overdone. I've also seen people put the foil on for the first hour or so then pull it, whichever works for you. The time in the over will depend on the size of the bird. Once you pull it from the oven let it sit for 10-15 minutes for the juices to pull back in then carve it up. :)

I wish I had people to cook for!

This is the first real holiday we will have being back in MI and in our new house. We did a test run for Halloween and it was nice, kids went and played in the basement and had lot's of room to run around and yell lol.

Our menu is the same every year, so that's the easy part! And everyone has a job and makes the same thing. We eat at my house and there are 9 of us. Me, husband, 2 kids, mom, dad, 2 brothers, and a mooching dog.

My mom found a turkey-shaped butter at Walmart and dropped that off the other day, so even our butter will be festive this year.

My husband and I usually go to a relatives for thanksgiving dinner, but this year I'm not sure we'll being doing that. On Saturday after all the previous day's shopping I make thanksgiving dinner for my husband and I - turkey breast and gravy in the slow cooker, green bean casserole, mashed potatos, baked sweet potatos, some sort of appetizers, and dessert. I like the idea that someone is making asparagus so I might do that too and chess pie sounds intriguing so I might try that.

Our menu hasn't changed much since DH and I have been together:

 

Honey glazed ham

 

Baked mac n cheese

 

Candied yams

 

Stuffing

 

Fried chicken wings

 

 

Cranberry sauce (the canned stuff)

 

Fresh string beans

 

Rolls/biscuits (DD12 has a recipe for biscuits that she plans on making)

 

Deserts:

Homemade sweet potato pie

Banana pudding

Possibly some cookies

That sounds really good, and nicely explained. 

 

However, I still like Alton Brown's Good Eats Roast Turkey the best, especially for novice cooks.  I no longer do a wet brine before hand, though.  I now dry brine first.

I really like his methods and recipe's in general, I've just always found wet brining to be scary for novice cooks so I went with the tried and true lol. I normally fry our turkey after injecting it with a homemade injection sauce before it goes in. This year I'm going to try smoking it and see how that comes out. I pray for my guests, one because it's my first time doing a turkey this way, two because I will have to be up looking at ad's all night and waiting for things to go online and I will also be going out to start the turkey REALLY early so I may be cranky. That topped with I will have to watch my Lions get destroyed on TV yet again this season.

It's pretty much the same menu for us every year. I'll be stuck doing all the cooking again this year, at least there will only be three of us (my parents and my self), everyone else is on the other side of the country. Unlike someone else. 15-20 really? Hopefully you won't be the only one cooking.

 

Menu

Turkey breasts roasted (stopped doing the whole turkey years ago. The animals ended up with all the dark meat, cause no one ate it.)

Brown sugar glazed ham

Stuffing

Mashed potatoes

Gravy

Green bean casseroles (first thing we run out of every year, without fail)

Candied yams (way too much sugar and should really be counted as a dessert, but the parents will have nothing else.)

Mashed spiced yams (only for me, so I may not make it. But it's so good!)

Cranberry sauce (the can shaped stuff) ;)

Rolls

Pumpkin pie

Pecan pie

 

I want to add glazed carrots and spinach artichoke dip to the menu this year but something tells me that won't happen. If I make some brown sugar bacon I might be able to get them to eat a spinach salad.

Our menu is pretty much the same every year as well.  There are generally 30-35 of us crowded in to my aunt's itty bitty house.  She does the turkey & dressing, and everyone else is assigned something else. There's always mashed potatoes, gravy, salad, rolls, deviled eggs, ham (sometimes), candied yams (yuk :)), green beans, all your normal, expected fare.  Then there are various desserts - a few pies, snickers salad, etc.  Someone is assigned pop, someone else is in charge of paper plates & plasticware.  It all works :).

We don't eat the dark meat much either but the whole bird tastes different to me lol. I know it's probably mental but hey I'm just sayin.

Wish you were closer, most of us prefer the dark meat.....The breast is the last to go and it gets drowned in cranberry sauce to make it moist enough...
