I want to have brunch on Christmas mid-morning. I can't seem to come up with a easy menu. This is what I have so far:

Ham

Hash brown casserole

Cinnamon rolls

Regular rolls

Olives, pickles, cheeses, butter

Pumpkin pie-husbands request

I am just drawing a blank. I'd like to keep stuff in crock-pots and be able to make it ahead of time if I can.

Any help?

Try rice or beans or mac & cheese.  You could also do a pasta salad or put soup in the crock pot or a couple different soups to simmer all day.

Thanks for the ideas.

I've added blueberry muffins, a scrambled egg muffin recipe I found, some kind of fruit salad, some kind of pasta salad, veggies and dip.

I've had to plan so many meals, birthday dinners, Thanksgiving dinner, school bake sales and parties, etc... that I'm just ready to be done!

A pumpkin, or other flavor, bread pudding comes together really quickly.  No brunch is complete without mimosas :)
