Something that stays sharp and that has a great weight distribution. I always window shop at Williams Sonoma when I get the chance but those knives run around $70 and up. But he tells me what they sell in the stores are for domestic use. Most of his knives are what he bought when he was in school & bought through his work. I totally agree with you, $70 for a knife is just way to much. Sadly to say, I would say the average knife in his collection is around $200. He said they used "Victorinox" I checked on amazon, it looks like they are reasonable in price. Hubby said the quality & performance was "pretty good". He has one of these knives at home, ,which is from his school years (10+ yrs ago) I use it & think it's good & hubby uses it at home when he just doing general everyday cooking.
