alimfp Posted September 4, 2006 Posted September 4, 2006 The difference is, a convection oven cooks food evenly. It usually has seperate heat sources at the top and bottom of the oven, sometimes even a third heat source at the back of the oven. So instead of having to place your food in the oven perfectly to cook evenly, it will cook evenly no matter what it in a convection oven (usually). ETA: I forgot to say they also have fan(s) to blow the hot air around evenly.
