ms_mckenna Posted November 19, 2006 Share Posted November 19, 2006 I have not made pies in years because the last ones I tried turned out icky. My DD asked me for a pumpkin pie this year. So I am asking the cooks in the group for a good pumpkin pie recipe. Also a good pecan pie or apple pie would be nice too. I am not an idiot when it comes to cooking ... I can make alfredo sauce from scratch. But for some reason I have never made a pie like that that turned out ok. I have some little pumpkins on my table can I use them for the pumpkin in a pie? Personally I would use the canned pumpkin since its already processed etc. Go to Food network, they have a ton of pumpkin pie recipes. i saw one Paula Dean done with apple butter in it.....She used a frozen pie crust, simple. Just pay attention to the recipe because some call for pumpkin puree and some call for the pumpkin pie filling (which is another great way to do it), I think the recipe is on the back of the can. Pumpkin puree doesn't have any spices etc added. I personally buy ours from Costco, one of the best that I have tasted and its big for $5.99. I had stuff overflowing everywhere when I used 2/3 c. of corn syrup. LOL.This must be for a deep dish crust.************* Here's a recipe that I like for Pumpkin Pecan Pie> I like it because it's not as sweet as regular Pecan pie. Pumpkin Pecan Pie Pumpkin layer: 1 (9inch) unbaked pie shell1 egg1 c. solid pack pumpkin1/3 c. granulated sugar1 tsp. pumpkin pie spice Combine egg, pumpkin, sugar, and pumpkin pie spice in a medium bowl. Spread over bottom of pie shell. Pecan layer: 2/3 c. light corn syrup2 eggs1/2 c. granulated sugar3 Tbsp. butter or magarine melted1/2 tsp. vanilla extract1 c. pecan halves Combine corn syrup, sugar, butter and vanilla in medium bowl. DS found a pumpkin pie on clearance at Walmart tonight and said Mom why don't you just use this? Well didn't have to tell me twice. A friend at work gave me this recipe, but I think it should have some kind of spice in it or something. But I'm not cook so I don't know..lol. Sweet Potato Pie 2 c. cooked sweet potatoes mashed 1 1/2 c. sugar 1 (8oz) can milk 2 eggs 1 tsp. vanilla 1 stick magarine melted Mix and bake in deep dish pie crust @ 350 for 30 minutes. You bake up and mash sweet potatoes, add milk or cream, a couple of eggs, butter, cinnamon, and nutmeg. I put that in a casserole bowl, and on the top you make a brown sugar, cinnamon, butter, pecan, flour, and coconut topping (mix all and cut in butter). bake it until warm and crispy. Sorry, but I just throw things in a pan, never time for recipes! I think i got it on allrecipes, the base idea. And the best pumpkin pie recipe is on the back of the libby's can! Hubby loves sweet potato pie and I wanted to make one for him this year. Edit: I mashed my potatoes and added cinnamon and nutmeg. I think it has definitely helped the taste.
