shanni Posted December 21, 2005 Posted December 21, 2005 I don't eat this but my husband loves it. I found this recipe and was wondering if it seems okay, seems like an awful lot of oil! INGREDIENTS: * 3 cups all-purpose flour * 1 teaspoon salt * 1 teaspoon baking soda * 1 teaspoon baking powder * 3 teaspoons ground cinnamon * 3 eggs * 1 cup vegetable oil * 2 1/4 cups white sugar * 3 teaspoons vanilla extract * 2 cups grated zucchini * 1 cup chopped walnuts Maybe someone has a better recipe? or you think this will be fine?

I dont sift my flour and I use self rising flour in place of all this stuff * 3 cups all-purpose flour * 1 teaspoon salt * 1 teaspoon baking soda * 1 teaspoon baking powder I also grate my Zuchinni with the peelings left on. my kids even like it if you add a cup of chocolate chips or rasins to the mixture

decafmom Posted December 21, 2005 Posted December 21, 2005 I like zucchini bread, and I use ALL applesauce, no oil. You can substitute applesauce for oil in almost anything you bake. Now I'm hungry!
