It's or coaches dinner for Christmas and I am stumped on this one. We usually do burgers and dogs by the pool, but this one will be indoors. Gotta be easy. Any ideas? You can do one set marinara sauce and multiple cheeses, maybe toss in some spinach for any vegetarians, and another set with meat sauce using both ground Italian sausage and ground beef, along with the multiple cheeses for those who eat meat. If you make sure all of the ziti is covered with sauce you don't have to boil it first. Just mix the pasta, sauce and all add ins together into disposable foil baking tins, making sure it is pretty wet with sauce, cover with foil and bake in a 350° F oven for an hour. Peel off the foil, check the tenderness of the pasta and cook longer if needed to get the ziti to al dente. Then toss on some grated mozzarella and parmesan on top, place back in the oven to allow the cheese to melt all gooey over the top, and remove. Allow to sit ten minutes (or longer covered) and serve. Those disposable chafing sets that the club stores sell, and the foil pans that fit inside them, work perfectly for this.
