Loaded Mashed Potato Caserole

6 medium potatoes

2 cups sour cream

2 cups sharp grated cheese

1/2 cup chives

1 teaspoon salt

1/4 cups melted butter

1/2 cup bacon bits

1 teaspoon garlic powder

1 teaspoon onion powder

 

*Boil potatoes until alomost done then

mash potatoes as desired. Combine all ingredients except butter and pour in 9x13 inch dish and dot with butter; cover. freeze or set in refrigerator overnight. Bake in preheated oven for 45 minutes at 350 degrees.The garlic and onion powder is optional but does add alot of flavor.

I will leak my best super fancy pie (it really not but my family thinks it is). Super Simple 1. A graham cracker premade crust 2. two boxes of jello pudding 3. Milk 4. Peppermint chips or white or chocolate chips 5. Cool whip 6. Sprinkles or nuts (optional)

 

Make the Jello Pudding like the pie filling but lower it by a half cup milk (makes it thicker).

Pour in peppermint chips, white or chocolate chips into pudding.

Pour into the pre made graham cracker crust.

Top with cool whip and fluff it up to look like merge.

Top with Sprinkles or nuts (optional).

 

My family begs me to make this every year. They act like is a huge chore to make but it takes five minutes to make. Some good combos are white chocolate pudding with peppermint chips with red and green sprinkles. Butterscotch, carmel pieces, with chocolate sprinkles ( great for halloween and thanksgiving).You can do it without chips but they make it look super fancy. The combos are limitless but you look like a chef but without the effort.

Gooey Pumpkin Butter Cake (Paula Deen -- So you know how many calories...)

Crust:

1 yellow cake mix

1 stick of butter, melted

1 egg

 

Filling:

1 can (15 oz) pumpkin

1 box (16oz) powdered sugar

1 block (8oz) cream cheese, softened

1 stick of butter, melted

1 egg

1 t. cinnamon

1/2 t. nutmeg

 

mix the ingredients for the crust and press into the bottom of a 9 x 13 " baking dish. Mix the filling ingredients and pour on top of the crust. Bake at 350 for about 45 min. The center will be gooey when done. Top with whip cream and serve! It is a great new take on a 'pumpkin pie' type of dessert. I get requests every holiday season for it, and some people at work even pay me for it! It is super easy though. YOu can also sub out the pumpkin for crushed pineapple and it makes a great summer time version.

This is a family favorite. We make up a few batches and have them to snack on during the holidays.

 

Beef Logs

2 or 3 packages of Buddig shaved beef

1 large brick of cream cheese

2 Tablespoons horseradish

 

Soften cream cheese and add horseradish. Take the beef and spread on a thin layer of the cream cheese mixture. Roll into log shape. You can also put a sweet gherkins in the middle too. Refridgerate for a few hours until the cream cheese hardens a bit. Cut each log into thirds.

 

You can add more horseradish or less. We like them a little spicy so we add more.

Last year was the first year I made this, but it was absolutely a hit. It went fast and I had made a huge amount of it. I found this recipe just browsing all over the web, but it is definetly a keeper. It isn't hot, just nicely spicey !

 

Sausage and Jalepeno Stuffing

 

Ingredients:

3/4 cup butter, divided

1 1/2 cups coarsely chopped onion

2 jalapeno peppers, seeded and minced

1/2 pound spicy Italian sausage, casing removed

1 (6 ounce) package cornbread stuffing mix

3 cups dry bread crumbs

1 teaspoon salt

1/4 teaspoon ground black pepper

2 cups warm chicken stock

1 egg, beaten

 

Directions:

1.Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch pan.

2.In a heavy skillet, melt 8 tablespoons butter over low heat. Saute the onion and peppers until soft. Place sausage in skillet; crumble and cook over medium high heat until evenly brown. Drain, and transfer to a large bowl.

3.Combine sausage mixture with stuffing mix, bread crumbs, chicken stock, egg, and salt and pepper. Mix well, and transfer dressing to prepared pan. Dot with remaining butter.

4.Bake for 45 minutes.

My dad used to make a variation of this for parties using dried beef (comes in jars) and he would shape it into a candy cane shape and use pimientos as stripes on it. You chop the dried beef and mix it into the softened cream cheese and horseradish. Then he used crackers around it, never any leftovers for us kids! Rats!

1 cup chopped pecans (I use about 2 cups because I like them all over the top)

1/2 cup butter, melted

1 cup light brown sugar

1 tsp vanilla

 

Bake Potatoes in oven till they are done. Scrap out insides and put into bowl.

Beet with beaters, stop and pull out any strings from the potatoes

Add butter and sugar while mixing

add milk, vanilla, and eggs

Milx well and put in 8 x 12 buttered dish (I use glass)

Bake for 20 - 30 minutes at 400 degrees or until heated through.

 

Mix the pecan topping and spread over casserole, bake an additional 10 - 15 minutes or until golden brown

 

Its Yummy!!!

CAKE

1/4 cup powdered sugar (to sprinkle on towel)

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon salt

3 large eggs

1 cup granulated sugar

2/3 cup LIBBY'S® 100% Pure Pumpkin

1 cup walnuts, chopped (optional)

FILLING

1 pkg. (8 oz.) cream cheese, at room temperature

1 cup powdered sugar, sifted

6 tablespoons butter or margarine, softened

1 teaspoon vanilla extract

Powdered sugar (optional for decoration)

 

Directions:

FOR CAKE:

PREHEAT oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

 

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

 

BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

 

FOR FILLING:

BEAT cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

 

COOKING TIP:

Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

1 cup chopped nuts(I used pecans-you can use your favorite)

8oz cream cheese(softened)

1 large container cool whip(thawed)

1 cup powdered sugar

2 boxes pistachio pudding mix(dont follow box directions)

2 1/2 cup milk

 

1st layer-mix graham cracker crumbs,nuts and melted butter with a spoon-pour

into cake pan and bake 20-30 mins @ 350

let cool completely

 

2nd layer-next mix 1 cup cool whip,cream cheese and powdered sugar beat well

with a mixer-spread onto the cooled crust

 

3rd layer-next mix 2 boxes pistachio pudding and 2 1/2 cups milk beat well

until thick-pour over 2nd layer

 

4th layer take remaining cool whip and spread over the pudding(3rd layer)

chill for about 2 hrs

I have this exact same recipe. My mom has Thanksgiving dinner and I made it one year to take, and now it's a holiday tradition. It is so good you could eat it for dessert. YUMMY!!

Thats exactly what happened with DH's side of the family.

I brought it as "my side" to help out a couple years ago.. and now its expected -

along with the pumpkin rolls. LOL

These are great on Christmas morning cause you get them ready the night before and they smell WONDERFUL baking while you ope presents!

 

WARM CINNAMON BUNS:

 

20 Unbaked Frozen Dinner Rolls

1 Cup Brown Sugar

¼ Cup Instant Vanilla Pudding Mix

2 Tsp. Cinnamon

1/3 Cup Butter-Melted

¾ Cup Raisins (opt.)

Lightly grease a 10 inch bundt pan. Place frozen rolls into pan and sprinkle with brown sugar, pudding mix, cinnamon and raisins. Pour melted butter over rolls. Cover with a clean, damp cloth and leave overnight at room temp.

In the morning, preheat oven to 350 Bake rolls for 25 min. or until golden brown. Turn rolls out of pan onto serving plate and serve warm.

This is a yummy tradition we have at our house.

 

CRUNCHY PEANUT BUTTER CHOCOLATE SPIDERWEB

 

1 (12 oz) Bag Semi-Sweet Chocolate Chips

1 Cup Creamy Peanut Butter-Divided

1/3 Cup Powdered Sugar

3 Cups Rice Krispie Cereal

Heat chips and ¾ cup peanut butter in small saucepan over low heat, stirring constantly until smooth. Remove from heat. Add sugar, stir vigorously until smooth. Add 1 cup melted chocolate mixture to cereal, stir to coat well. Place on ungreased baking sheet. Using a small spatula, shape into a 10 inch circle with a slightly raised border. Pour remaining chocolate mixture into the center of the circle, spread to border.

Spider web: Place remaining peanut butter into a small sandwich bag. Cut a tiny hole on one corner of bag, squeeze to pipe a small “O” in the middle of the formed chocolate circle. Continue making these getting larger each time (like a target). With a toothpick or edge of a sharp knife, pull tip through the peanut butter circles from center to border.

Refrigerate 45-60 min. or until firm.

Cut into wedges when ready to eat.

I also do a sweet potatoe casserole, but I use canned sweet potatoes and walnuts instead of pecans. We went to Thanksgiving dinner at my brother's house one year, and my sister in law's sister in law brought it. We loved it, and dh made me get the recipe before we left. I made it the next Thansgiving and it was a hit, so now it is expected at every major holiday: Thanksgiving, Christmas, and Easter.

Isn't it funny how so many of us have the dishes we are "expected" to bring to all family dinners? Mine is cauliflower salad at DH's dad's family. Yet it is my ramen slaw to my sister's (because of my neice). And with all my kids' birthdays and any pitch in birthdays we go to I am expected to bring my homemade mac/cheese.

 

I think Thanksgiving this year I will leave the cauliflower salad in the van until I see how many people ask me where it's at... lol

This one is a great favorite in my family. we bake the potatoes instead of boiling them. My

son who is in the Navy and lives in a motor home makes it as his contribution whenever he visits someone for the holidays. Made my day when he said this. :cheesy:

This sounds yummy! LOVE pistachio!! In fact, I think I've had this before, I think my mom made it when I was a teenager, but I'm sure she would have no idea what I was talking about if I asked her for the recipe...guess I'll just have to make it myself to see if it's the recipe I was hoping to find!
