Allow me to start:

I would like to find more cookie recipes that do not require eggs - I have someone at work that doesn't eat eggs, and every year I stretch to find some recipe that doesn't have eggs, and it's always some kind of shortbread. Is there anything else out there?

just did a little search online  for ya...try the website ...Keeping Life Sane.. i have NOT tried the recipes but I bake ALOT and they seem to be right in line with good recipes I use ( without the egg of course) good luck!

I make:

chocolate chip cookies with milk and dark chocolate chips

Cut out sugar cookies

peabut butter blossoms

Reese peanut butter cup cookies

Ginger bread or molsses

White chocolate cherryshortbread

chocolate chip snowballs

mint chocolate snowballs

Chocolate cookies with either peanut butter chips or vanilla chips

Cherry fudge cookies

Google Vegan cookies.  They are a PITA to make as it is time consuming because you have to freeze the batter.  Since most of the recipes are make with coconut oil, the batter has to be firm so the cookies don't melt in the oven. 

I use to bake a lot but now the kids are over it’s pointless as we don’t get many visitors.

Same boat here.  I found out that our police and fire stations love to get home baked goods at the holidays, so I bake for them now!

I would love to find a good sugar cookie recipe for the cookie press. My crew doesn't love the stock recipes for the cream cheese spritz or butter cookies. But they love sugar cookies. I've tried just some regular mixes and recipes, and they are either too dry or sticky for the press.

I can throw a couple egg free cookie recipes your way for sure!!!  Ones I've made for years that just don't happen to have eggs - never really though about an allergy!!!  :)"

 

 

Lemon Snowball Cookies

 

  • 2 cups (282g) all-purpose flour

  • 3 Tbsp (24g) cornstarch

  • 1/4 tsp salt

  • 1 cup (8 oz) butter, softened

  • 2/3 cup (84g) powdered sugar

  • Zest of 2 lemons (about 4 tsp)

  • 2 tsp lemon extract

  • 1/2 tsp vanilla extract

  • 1/2 cup (68g) finely chopped almonds

  • 1 1/2 cups (180g) powdered sugar, for coating

Directions

  • In a mixing bowl whisk together flour, cornstarch and salt, set aside.

  • In the bowl of an electric stand mixer fitted with the paddle attachment, mix butter on medium speed until creamy, about 20 seconds. Blend in 2/3 cup powdered sugar. Mix in lemon zest, lemon extract and vanilla extract. With mixer set on low speed slowly add in flour mixture and mix just until combine. Stir in almonds. Cover bowl with plastic wrap and chill 30 minutes, preheat oven to 350 degrees halfway through chilling.

  • Scoop dough out 1 Tbsp at a time and roll into a ball, then place balls on Silpat or parchment paper lined baking sheets, spacing cookies about 2-inches apart and bake in preheated oven for 16 - 18 minutes (these are a cookie that I think are best when they aren't moist in the center so I'd say don't under bake them. 

These actually are a cookie that are meant to be dry. Dry but a melt in your mouth kind of dry). Remove from oven and allow to cool several minutes then while cookies are still warm, pour 1 1/2 cups powdered sugar into a bowl and roll cookies in powdered sugar. 

 

Transfer to a wire rack to cool then once cookies are cool, roll in powdered sugar once more, this time to generously coat (I pressed it into the powdered sugar to give it a thick coating). Store cookies in an airtight container.

 

Cocoa Kiss Cookies

 

1 cup (2 sticks) butter, softened

⅔ cup sugar

1 tsp vanilla

1 ⅔ cups all purpose flour

¼ cup cocoa powder

1 cup FINELY chopped pecans

1 bag (9 oz) Hershey’s Kisses

Powdered Sugar

 

Beat butter, sugar and vanilla in large bowl until creamy.  Stir together flour and cocoa; gradually add to butter mixture, beating until well blended.  Add pecans. Beat well. Refrigerate dough 1 hour or overnight. Needs to be firm enough to handle.

 

Heat oven to 375.  Remove wrappers from kisses.  Mold tablespoon of dough around each chocolate piece, covering it completely.  Shape into balls. Place on ungreased cookie sheet - or one lined with parchment paper.

 

Bake 10-12 minutes or until set.  Cool slightly. Remove to wire rack, cool completely.  Roll in powdered sugar. Roll again in sugar just before serving if desired.

Kieflees (Spelling wrong!!!  How DO you spell that word??? - OLD recipe - dough wrapped around sweetened ground pecan filling - SO good)

Cocoa Kiss Cookies

White Chocolate Peanut Butter Cookies

Drop Style Sugar Cookies

Chocolate Cherry Blossom Cookies

Butterfinger Peanut Butter Oatmeal Cookies

Chocolate Chip Cookie Recipe made with Dark Choc, Dried Cranberries and slivered Almonds

 

I bake and freeze ahead of time - have for years - which is the only way I get this long list done in time!!! :)

Eggless chocolate peanut butter cookies

 

Ingredients

2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup butter, softened

1 cup sugar

 

2 tablespoons brown sugar

1/2 teaspoon vanilla extract

1/4 cup cocoa powder

1/3 cup peanut butter

1/2 cup milk

Directions

Preheat the oven to 375 degrees F (190 degrees C).

 

Sift together flour, baking soda, baking powder, and salt. Set aside.

 

Cream together butter, sugar, and brown sugar in a large bowl. Mix in vanilla extract and cocoa powder, then add peanut butter, and stir until smooth. Gradually mix in the sifted ingredients until well blended. Pour milk into dough, and stir until fully combined.

Drop dough by heaping teaspoons onto ungreased baking sheets. Bake in the preheated oven until edges are lightly browned, 11 to 13 minutes. For a crunchier cookie, bake an additional minute or two.

My list for this year (pretty much the same as most years): 

 

  • Chocolate chip cookies (about 35 dozen)
  • Peanut butter cookies (about 15 dozen)
  • White chocolate chip macadamia cookies (about 20 dozen)
  • Oatmeal PB choc chip cookies (made with mini choc chips, about 15 dozen)
  • Candy cane kiss cookies (Chocolate cookies with a Hershey's candy cane kiss pressed in the middle - basically Xmas version of PB blossoms) (about 8 dozen)
  • Lemon "sparkle" cookies (totally from scratch - I zest and juice the lemons myself, about 7 dozen)
  • Snickerdoodles (about 10-15 dozen)
  • Brownies (3 9x13 pans)
  • Chocolate peppermint 3-layer fudge (3 8x8 pans)
  • Chocolate raspberry 3-layer fudge (this year using homemade raspberry extract from a friend who makes it! Woo!) (2 8x8 pans)
  • Pumpkin bread (3 loaves)

I think that's everything. Fully half of everything on the list needs to be done and shipped by Dec 11th at the latest (for my NASCAR boys). If I get adventurous, I may try thumbprint cookies this year. Got a good friend (& their family) that I think will appreciate them. :)

As far as cookies go, I stick with regular sugar cookies with buttercream icing.  We make a LOT of them though. LOL

 

I will also be making:

peanut butter cups

Rolo bites

dipped pretzel rods

candies oat squares and pecans

peanut butter crunch balls

what recipe do you use for your White Chocolate Macadamia Cookies? I think I want to make some this year. I want to make them the larger ones. I think I’m going to do PB Blossoms, WC Macadamia, Chocolate Chip, PB Cookies, Maybe Candy Cane cookies (make the dough, split and color half red) twist together and when baked and hot sprinkle with crushed candy canes, maybe do my oatmeal raisin cookies if I can find my recipe.

I have been planning out my cookies for the family cookie exchange on the 22nd. Will probably start backing on the 16th and bake all week. Making my MUST-HAVES (per my family) of Chocolate Chip cookies and Chocolate Crinkles, and wanting to try to make some new cookies this year including snowballs, frosted Amish sugar cookies, chocolate bars and peppermint bark chocolate bars. Thinking about holding off on the snikerdoodles and shortbread cookies until New Year's, as everyone else is bring several kinds of cookies as well, and it is going to be a SUGAR OVERLOAD! ;)

what recipe do you use for your White Chocolate Macadamia Cookies? I think I want to make some this year. I want to make them the larger ones. I think I’m going to do PB Blossoms, WC Macadamia, Chocolate Chip, PB Cookies, Maybe Candy Cane cookies (make the dough, split and color half red) twist together and when baked and hot sprinkle with crushed candy canes, maybe do my oatmeal raisin cookies if I can find my recipe.

I use this recipe from America's Test Kitchen for Oatmeal Raisin cookies (just add raisins)

So yesterday at the store I realized how close it is to baking time, yikes!

 

I was feeling lazy, so I bought chocolate chip and sugar cookie mixes, and refrigerated brownies. Right now I don't have the oomph to think about more than that, but hopefully that will change.

Last year I made cool whip cookies, and the whole time I said I would never make them again... but they were so good, I might.

 

For candy, I always make about 20 dozen buckeyes, and last year I learned how to make butter mints, so I'll probably make those again. And maybe peppermint patties.

I may have to try this recipe out. I’m sort of bummed I make my own vanilla extract and realized at Thanksgiving I don’t have anymore. Takes me a minimum of 8 weeks to make a batch.
