I was just wondering if there are better online (or offline) deals days after Christmas or days before Christmas? Perhaps it depends on the store or website? What time of the year do you find the greatest sales/clearance? Thanks.

The deals you find after Christmas are typically clearance, not "sales", and everything is picked over.
